Ina Garten Just Shared the First Recipe From Her New Cookbook

We’ve been heavily relying on Ina Garten’s recipes lately, and luckily she has a lot to share. From pantry recipes we can make with ingredients we already have on hand to comfort food recipes that make the hard times feel a little less trying, we can always count on Garten to deliver the best when it comes to flavor. Now, Garten has a brand new cookbook coming out this fall. Modern Comfort Food features more of the classic Garten we love, but with a twist, and the Barefoot Contessa herself just shared a sneak peek of one of the recipes from her new book. It’s a recipe for English Roasted Potatoes, which is already enough to get us excited, but even more intriguing is the fact that the recipe comes from Mary Poppins star Emily Blunt!

 

This is just the sort of recipe we’re into cooking these days. It comes down to technique more than anything else, and with just three ingredients, it’s totally quarantine-friendly. All you need to make it are Yukon Gold potatoes, oil, and salt, with the optional additions of minced parsley and coarse sea salt to finish the dish if you’re feeling fancy.

There are a few things that make these potatoes different than the usual slap-dash, chop and roast method we use.

First, the potatoes are peeled, then parboiled. The potatoes are strained then shaken up in the pot, which helps rough up their exterior – getting the outer layer of starch on the potatoes roughed up is what will give them an extra crispy texture.

The potatoes are then left to dry, which will also help them crisp up instead of steam in the oven.

Then, the cooking oil and baking pan are both preheated, so that when the potatoes are added, everything it hot and the crisping and browning begins almost instantly.

When the potatoes are done roasting, they’re creamy and tender inside, with a deliciously crunchy, caramelized exterior.

It sounds like Blunt has worked her Mary Poppins magic on this recipe, and we can’t wait to try this new method of making classic roasted potatoes.
