Ingredients for approx. 350 g
For the almond yogurt
- 800 ml of filtered water (alternatively, carbonated water from a glass bottle)
- 200 g almonds, unpeeled – soak overnight*
- 1 packet (25 g) vegan organic yogurt ferment
- 1 nut milk bag (or, alternatively, 1 passier cloth)
- 2 jars of 500 ml
*As a result, the contained nutrients and vital substances can be absorbed easier and at the same time, the digestive system is relieved.
Preparation
Preparation time about 10 minutes
First an important note: the yogurt after the completion will not be mouldy, and it is important, as hygienically as possible to work.
The soaking water, the almonds, drain them and, once again, over a colander to rinse. Then, together with 800 ml of water in a high-performance blender and a few minutes of vigorous mixing.
A bowl with a strainer ready to make the nut milk bag or the passing cloth and the almond milk happen. All the liquid pressing firmly; the leftover pulp can be used for baking or for cereal.
Then rinse the jars with boiling water and allow to dry.
The yoghurt ferment in the milk, stir until all the powder is dissolved. Then the milk in the jars, on the upper edge of at least 2 cm. Close the jars and about 12 to 24 hours at a warm place. Depending on the temperature (e.g. in the kitchen or on the heater) can be used to vary the fermentation time. Therefore, so long let it stand until the whey at the bottom has to settle and the top is a solid mass swims.
Then the mass gently with a spoon to hold and the whey in a container of casting.
The solid mass into a bowl and with a whisk stir to a creamy yogurt.
The yogurt back in a Jar and fill again to cool. So he is something solid, and the fermentation process is slowed down.
The yogurt should be consumed within a few days.
Tips: The yogurt can, if needed, with fruit, Yaconsirup, agave syrup, vanilla powder, cardamom, etc. – depending on the using purpose – flavoured.

You can of course also produce other seeds or nuts, such as Cashew, Macadamia, etc., a delicious yogurt.
