Fall is officially here, and that means we’ve jumped headfirst into all things pumpkin, apple, and autumn. But we often find ourselves torn. We want to do a fun fall baking activity, but never seem to have the time (or the patience to wash all those measuring cups and spoons when we’re done). Thankfully, there’s a happy medium between the Martha Stewart-style gourmet triple layer apple cakes of the world and just buying some hand pies at Trader Joe’s. It’s a 2-ingredient pumpkin spice muffin recipe, and we’ve been seeing it everywhere on TikTok, for good reason.

There are a few reasons why we love these easy 2-ingredient pumpkin spice muffins. For one thing, the ingredients called for are affordable. All you’ll need is a box of cake mix and some canned pumpkin puree. That means it’s not just a budget-friendly recipe to make at home, but it’s also great for things like back-to-school bake sales and open houses where you need to make a bunch of treats without blowing the bank.

So, how do you make them? It’s really easy. You just mix a box of spice cake mix with a can of pumpkin puree. The batter will be thick, not runny. Dollop the batter into a lined muffin tin. Bake them for the time listed on the box, and you’ll be rewarded with thick, moist, pumpkin spice muffins. There are a lot of ways you can put your own spin on these easy pumpkin muffins, too. Throw in some chocolate chips or toasted walnuts; top with cream cheese frosting; add in extra spices and vanilla; there are a lot of different ways to play around with the formula.
