Ingredients for 2 servings
For the Brussels sprouts soup
- 200 g of Brussels sprouts – outer leaves removed and cut into quarters
- 70 g Quinoa
Liquid ingredients and spices
- 1 Ltr. Vegetable broth
- 100 ml coconut cream
- 1 TBSP Tamari (or soy sauce)
- 1 TBSP finely grated ginger
- 1 tablespoon curry powder
- 2 Kaffir Lime Leaves
- Crystal salt
- Pepper from the mill
Preparation
Preparation time about 10 minutes cooking/baking time approx. 25 minutes
The peanut oil in a saucepan and add the ginger in it for 1 Min. sauté, then with curry powder, sprinkle with vegetable stock. Tamari and lime leaves, bring to a boil and Quinoa, stir.
The Whole a medium level of approx. 15 Min. simmer. Then the lime leaves, remove the coconut cream, stir in the Brussels sprouts and a further 5 Min. simmer. Then season with salt and pepper.
The Brussels sprouts soup in two deep plates and serve.
