Ingredients
- 1 cup dates, pitted, or apricots
- 1/2 cup cocoa powder
- 1/4 cup honey
- 1 cup medium desiccated coconut plus extra for coating
- 1/4 cup quick cooking rolled oats
- 1 tsp. pure vanilla extract
- 1/2 cup unsalted cashews
Method
Place all ingredients in a bowl and mix. if you’d like a smoother ball, pop the ingredients in a food processor and whizz until the mixture starts to pull together. Roll into balls and roll in additional coconut. Store in a tight sealed container in the fridge or freezer.
