Pumpkin seeds might not look like much, but adding them to your daily diet will fill you with powerful antioxidants and nutrients.

Did you know that pumpkin seeds can even improve your heart and prostate health and protect you against some types of cancer?

They’re great for reducing inflammation, warding off headaches, maintaining healthy bones and regulating blood sugar too.

Don’t eat them straight from the pumpkin though, here are the best two ways to cook them.

How to bake pumpkin seeds

Boil some salted water in a large saucepan, add the cleaned seeds and boil for five to 10 minutes depending on the size, then drain on a kitchen towel.

Toss the drained seeds with a little oil, some seasoning and spread evenly across a large baking sheet

Roast the seeds at 180C/gas 4 for about eight to 10 minutes.

How to roast pumpkin seeds

You need

  • fresh pumpkin seeds scooped from the pumpkin
  • 2 tsp olive oil

Method

Heat the oven to 200C/180C fan/gas 6.

Wash the seeds thoroughly and remove any stringy bits of pumpkin flesh.

Dry well using kitchen paper.

Put the seeds on a baking tray and toss with the olive oil, making sure they are evebly coated.

Then pop them in the oven and roast for 10 mins.

Serve with a little seasoning for a snack, if you like, or use it as a garnish for salads or soups.
