Millet patties with cauliflower puree

Ingredients for 2 servings

For the cauliflower puree

  • 400 g cauliflower – cut in small florets
  • 150 ml of water
  • 100 ml soy cream
  • 1 TBSP vegan organic Margarine
  • 1 TBSP Almond butter
  • 1 Msp. Nutmeg powder

For the millet patties

  • 125 g gold millet
  • 70 g carrot, peel and finely grate as well
  • 60 g of celeriac (net!) – peel and finely grate as well
  • 1 TBSP capers – chop
  • 60 g spelt breadcrumbs 5 TBSP for Breading
  • 1 ½ TBSP potato starch
  • 300 ml vegetable broth
  • 30 g vegan organic Margarine
  • 3 TBSP Tamari (or soy sauce)
  • 2 TABLESPOONS Apple balsamic vinegar
  • 2 TBSP Yaconsirup
  • 1 Pinch Of Cayenne Pepper
  • 1 Pinch Of Nutmeg Powder

Preparation

Preparation time 30 minutes cooking/baking time approx. 1 hour

For the patties, the vegetable broth and bring to a boil in a pot, lightly salt and the millet, stir. Then the temperature to a low level shift down, and covered about 10 Min. easy simmer. Turn off the heat, and the millet, covered, 30 Min. sources.

For the mashed potatoes, the Margarine in another pot melt and the cauliflower in it 3 – 5 Min. stewing. With soy cream and cook with nutmeg, salt and pepper. 15 Min. leave to simmer until the Sauce is overcooked.

The contents of the pan together with 150 ml of water in a blender. The Whole thing back into the pot, add Almond butter, stir and reheat. Season with salt and pepper and cover to keep warm.

The ready cooked millet in a bowl and let it cool down. Then carrots, celery, capers, potato starch and 3 TABLESPOONS of breading flour. With Tamari, balsamic vinegar, Yacon, nutmeg, and Cayenne pepper spicy, to taste.

The rest of the breadcrumbs on a deep plate and another flat plate with kitchen paper stocked.

The Margarine in a frying pan slowly. In the meantime, from the mass of four of the patties in bread crumbs and fry at medium temperature on both sides, about 2 Min. fry for a minute. Then remove from the pan and Drain on kitchen paper.

If necessary, the cauliflower puree, heat again, together with the millet patties and garnish and enjoy.
